weeknight chicken curry

bringing you a no fuss (kinda no recipe) curry to add to your weeknight repertoire. Exact measurements aren’t necessary for this guy, so it’s a great one to flex that taste and cook as you go muscle. substitutions welcome, as always :)



Coconut Curry Chicken
Ingredients
a few garlic cloves, minced
an inch or so of peeled ginger, minced
Curry paste (red, yellow, or green — your call)
Tomato paste
a smallish onion, sliced into half moons
any color bell pepper, seeded sliced into ¼” strips
1 can full-fat coconut milk
fish sauce
limes
2 Chicken breasts, thinly sliced
cilantro, scallions, and jalapeños to garnish
Start with a generous pour of oil in a fry pan over medium heat. Fry the garlic and ginger until fragrant and just barely golden, about 3 minutes. This is the flavor base so we want to give them time to warm up.
From there, add a spoonful or two of tomato paste and curry paste- I’m talking big spoonfuls not baby guys. Stir them into the aromatics and let everything caramelize together for another minute until it darkens slightly and smells incredible.
Add the onions and peppers, and toss them to coat in all that paste and let them soften a bit, picking up all the color and flavor from the bottom of the pan, 2 to 3 minutes. Pour in the coconut milk and stir to bring it all together into a sauce. Bring to a simmer, add a big pinch of salt along with a few healthy glugs of fish sauce. Simmer for 10 minutes to allow the veg to soften and the flavors to meld.
Nestle in the thinly sliced chicken breast and bring everything back to a gentle simmer. Because the chicken is sliced thin it won’t need long — just enough time to cook through and soak up the sauce, 6 to 8 minutes on low. Make sure not to let the curry boil, as the chicken will become tough instead of tender.
Just before serving, season with lots of lime juice and more salt if needed.
Serve over rice with something fresh on top if you have it — cilantro, scallions, another squeeze of lime, and/or a spoonful of chili oil.
